White Bean Chicken Chili


I don't know about you, but I'm sick of winter! We haven't seen the ground in about 4 weeks because of all the snow. This soup is perfect on a cold winter day.

2 cans chicken broth
onion powder
2 cloves minced garlic
2 cups cubed cooked chicken
2 cans great northern beans, rinsed and drained
1/4 cup finely chopped celery
1 Tbl parsley
1/2 tsp ground cumin
salt, to taste
pepper, to taste
optional toppings: sour cream, green chilies, jalapeno peppers, shredded mozzarella
  • Put all ingredients into pot and bring to boil
  • Reduce to simmer 10 minutes
  • Spoon into bowl and add toppings
