English Muffin Pizzas

We went out to eat last night, so we didn't have left overs for lunch today. My husband took PB&J, but only left the heal and one slice of bread...I don't eat the heal-YUCK! Usually when this happens, I just put pepperoni and cheese in a tortilla and heat it up, but we didn't have any tortillas. So I came up with this recipe. You could make it as simple or complicated as you want depending on your toppings.

English muffins, split in half
butter
pepperoni
shredded cheese
garlic, minced
oregano
other ideas: tomato, basil, ham, bacon, chicken, pesto, bbq sauce, etc
  • Preheat oven to 350*
  • Butter each half of the English muffins
  • Top with minced garlic, pepperoni, cheese, and oregano.
  • Bake for about 10 minutes or until cheese is melted and bread is toasty.
