Menu Plan Monday May 24-27

     I don't know about you, but this is my favorite time of year. It's not prohibitively hot, and the evenings are still pretty cool. We were outside all weekend, and we had so much fun with E's grandparents. They brought their dog, Princess, so I'm pretty sure Miss E will be asking for one soon. This is the first time my daughter has slept past 7am in months!
     One of the things we did this weekend, was build a raised garden bed. This is my first time trying to grow things that we will eat. Until recently, I had very little success growing things classified as "easy flowers." We are starting pretty simple with a couple kinds of tomatoes, zucchini, and a variety of peppers. We also have basil, cilantro and chives. I have my book in hand, and my Mother-in-Law on speed dial should I come up with any questions! I'm excited to see the vegetables come out, and use those fresh herbs rather than depending on dry.
     Even with all the excitement, I somehow managed to plan this week's menu with lots of new recipes...

Pumpkin Nutella Muffins
Waffles Ranchero (New!)
eggs, toast, bacon,
Yogurt, fruit

cucumbers, carrots
triscuits, string cheese
apples with PB
pears, strawberries

Pepper Jack Enchiladas
Terra Ricotta Chicken Flatbreads
Dijon Chicken Salad
Steak Teriyaki Stir-fry
Italian Chicken
