Pumpkin Pancakes with Maple Creme

      Nothing screams fall more than pumpkin! These pancakes were just the right thing for a cool Fall morning. These were so rich and delicious...and seriously, make the maple creme. It makes them even better than they already are!

3/4 cup whole wheat flour
2 Tbl whole wheat flour
3/4 tsp baking soda
1/4 tsp salt
1 Tbl cinnamon
1 tsp nutmeg
3 egg whites, whipped
3/4 cup pumpkin
3/4 cup plain yogurt
2 Tbl brown sugar
2 tsp vanilla

4 oz cream cheese
1/4 cup maple syrup

chopped pecans

  • Whisk dry ingredients together. 
  • Separately, combine wet ingredients. 
  • Combine wet and dry ingredients and rest for 10 minutes.
  • Scoop pancakes onto hot griddle using 1/4 cup measure. Flip when edges turn to brown the other side.
  • Top with maple creme (cream cheese and maple syrup) and chopped pecans

  1. ummm...this sounds sooo delicious. Maple cream...I'd just about kill for it.
    We went to our State Fair today and Mr. Sweet bought a wedge 2 1/2" square of Maple Walnut Fudge for FIVE BUCKS. ...can you believe it? whew..that's a lotta money for a tiny bit of candy.
